  • 1 cup freshly squeezed lemon juice (56 ripe lemons)
  • 1.5 cups white granulated sugar
  • 2 cups water
  • 2 cups cold water
  • 1 tsp vanilla extract

Instructions

  1. Juice the lemons and strain to remove seeds and pulp.
  2. Peel and slice the peaches, then combine them in a sauce pot with sugar, vanilla extract, and 2 cups of water. Stir well.
  3. Heat the mixture over medium heat until simmering, then lower the heat and cook until peaches soften (about 10 minutes).
  4. Strain the peach mixture into a large pitcher; add cold water and lemon juice. Stir to combine.
