  • 1/2 cup 2% milk
  • 1/4 cup butter, cubed
  • 1/2 teaspoon pepper
  • 1/8 teaspoon salt
  • 11/2 cups shredded cheddar cheese, divided
  • 1 cup sour cream
  • 2 tablespoons minced fresh chives

Instructions

  1. Preheat your oven to 350°F. Place red potatoes in a stockpot, cover with water, and bring to a boil. Cook for about 15-20 minutes until tender. Drain and return to the pot.
  2. Mash the cooked potatoes with a potato masher. Gradually mix in milk, butter, salt, and pepper until combined. Transfer to a greased baking dish.
  3. Layer with one cup of cheddar cheese over the mashed potatoes followed by dollops of sour cream and the remaining cheese on top.
  4. Bake uncovered for 20-25 minutes until heated through and cheese is melted. Garnish with fresh chives before serving.
