  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)

  • 6 tablespoons butter
  • 3/4 cup half and half
  • fresh ground pepper

  1. Preheat oven to 375°F (190°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until golden and soft.
  2. Place quartered potatoes in a pot, cover with cold water, add salt, and bring to a boil. Reduce heat and simmer for about 15 minutes until fork-tender.
  3. Drain potatoes and return them to the pot. Squeeze in roasted garlic cloves.
