  • 3 tablespoons butter
  • 1 small onion, thinly sliced
  • 4 large garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 1 cup chicken stock or vegetable stock
  • 2 cups whole milk (or half-and-half)
  • 1 1/2 teaspoons Kosher salt
  • 1/2 teaspoon black pepper
  • 4 pounds Yukon Gold potatoes, sliced into 1/8-inch rounds
  • 2 cups sharp cheddar cheese, grated
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. Preheat your oven to 400°F and grease a 9 x 13-inch baking dish.
  2. Melt the butter in a large sauté pan over medium-high heat. Sauté the onion for about 4-5 minutes until soft; add garlic and cook for an additional minute.
  3. Stir in flour until combined, then gradually whisk in the chicken or vegetable stock followed by milk, salt, pepper, and thyme. Cook until slightly thickened.
  4. Layer half of the potato slices in the baking dish. Pour half of the sauce over them and sprinkle with cheddar and Parmesan cheeses. Layer the remaining potato slices on top, followed by the rest of the sauce and cheese.
  5. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 25-30 minutes until golden brown and bubbly.
