  • 2 cloves garlic (minced)
  • 1/2 inch cube ginger (minced)
  • 1 shallot (thinly sliced)
  • 1 lb ground beef
  • 1 carrot (grated)
  • 2 tbsp tamari
  • 2 green onions (chopped)
  • 1/4 cup cilantro (roughly chopped)
  • 10 cabbage leaves
  • 3 tbsp tamari
  • 1 tbsp sugar-free maple syrup
  • 1 tbsp toasted sesame oil
  • 1/2 lime (juiced)

Instructions

  1. Preheat the oven to 350°F and bring a large pot of water to a boil.
  2. Blanch cabbage leaves in boiling water for 1-2 minutes until bright green; transfer to an ice bath.
  3. Sauté shallots in olive oil until translucent, then add garlic and ginger; cook until fragrant.
  4. Incorporate ground beef into the pan, cooking until browned. Mix in grated carrots, tamari, and green onions; stir in cilantro before removing from heat.
  5. Prepare cabbage leaves by cutting out the stems. Fill each leaf with 2-3 spoonfuls of the beef mixture, rolling tightly.
  6. Place rolls seam side down in a baking dish and drizzle with sauce made from tamari, maple syrup, sesame oil, and lime juice.
  7. Bake uncovered for 15-20 minutes until heated through.
