- 5–6 cups chicken broth
- 1 pound dried lima beans (rinsed)
- 1 smoked turkey leg
- 1 teaspoon Creole seasoning
- 1 bay leaf
- Soak the lima beans in boiling water for 1 hour, then drain.
- In a Dutch oven, heat olive oil over medium-high heat. Sauté onions and garlic until translucent.
- Stir in chicken broth, soaked lima beans, smoked turkey leg, Creole seasoning, and bay leaf.
- Cover and simmer on medium-low for 1½ to 3 hours until beans are tender.
- Remove the bay leaf and turkey leg; shred the turkey if desired. Adjust seasoning before serving.
