  • 1 tablespoon kosher salt (plus ¾ teaspoon)
  • 2 tablespoons apple cider vinegar
  • ½ cup mayonnaise
  • ¼ cup sweet pickle relish
  • 2 teaspoons yellow mustard
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup diced celery
  • 2 tablespoons diced red onion
  • 2 tablespoons sliced green onion
  • 2 large hardboiled eggs

Instructions

  1. Peel and dice the potatoes into ¾-inch cubes. Place them in a large saucepan and cover with cold water by an inch.
  2. Bring to a boil over high heat, add 1 tablespoon salt, reduce to medium heat, and simmer until fork-tender (about 8–10 minutes).
  3. Drain the potatoes and transfer to a bowl; stir in apple cider vinegar. Let sit for about 20 minutes while still warm.
  4. In a separate bowl, whisk together mayonnaise, pickle relish, mustard, ¾ teaspoon salt, black pepper, and garlic powder.
  5. Add the dressing mixture to the marinated potatoes along with celery, red onion, green onion, and chopped eggs; season further as desired.
  6. Cover and refrigerate for about an hour before serving; garnish with smoked paprika and sliced green onions.
