  • 5 lbs russet potatoes, peeled and cubed
  • 8 tbsp salted butter, melted
  • 2 tbsp salted butter, cold
  • 8 oz cream cheese, softened and cubed
  • 1 cup half-and-half
  • 1/2 tsp salt
  • Pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Peel and cube the russet potatoes. Rinse and drain them.
  3. Boil the potatoes in salted water until fork-tender (about 10-15 minutes). Drain well.
  4. Allow the drained potatoes to steam on low heat for about 3 minutes.
  5. Transfer to a mixing bowl or stand mixer. Mash, then add melted butter, salt, and pepper.
  6. Mix in cream cheese until combined, then gradually add half-and-half until desired consistency is achieved.
