  • 1 medium carrot
  • 2 tablespoons olive oil (or coconut oil)
  • 1 medium onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 1 teaspoon fresh thyme
  • 2 scallions (green onions)
  • Salt (to taste)
  • 1 cup water (or vegetable broth)
  • 1 Scotch bonnet pepper (optional)

Instructions

  1. Wash all vegetables thoroughly. Chop the cabbage into thin strips, slice the carrot, dice the onion, mince the garlic, and chop the bell pepper.
  2. In a large skillet over medium heat, add olive oil until shimmering.
  3. Sauté chopped onion and minced garlic until translucent (about 2–3 minutes).
  4. Stir in cabbage, carrot, bell pepper, thyme, scallions, and salt until well mixed.
  5. Pour in water or broth; add Scotch bonnet if using. Cover and cook for 7–10 minutes until cabbage is tender but crisp.
  6. Remove from heat; adjust seasoning as needed before serving warm.
